Chef Jason Manson's Ramadan and Raya Recipe: Aussie Beef Skewers
400 g chilled Australian beef, thinly sliced
50 g hoisin sauce
50 g white vinegar
50 g soy sauce
5 g barbeque sauce
20 g spring onion
10 g garlic, finely minced
10 g ginger, finely minced
3 tbsp cooking oil
10–12 pcs bamboo skewers
Dipping Sauce
5 g sesame oil
40 g soy sauce
40 g honey
20 g sriracha sauce
10 g brown sugar
For the sauce marinade, mix everything in a bowl until well combined. Set aside.
Slice the beef thinly against the grain, around 3–4 cm in length.
In a bowl, add the thinly sliced beef, hoisin sauce, white vinegar, soy sauce, BBQ sauce, spring onion, garlic and ginger. Mix well and marinate in the refrigerator for about 6 to 12 hours.
Thread 2–3 slices of beef onto each skewer and repeat.
Heat a medium-sized pan and drizzle with oil. Once the pan is hot and the oil is slightly smoking, cook the beef skewers for about 2 minutes on each side in batches. You can also cook the skewers on a BBQ.
Let the beef skewers rest for 2 minutes, then serve on a plate with honey sriracha dipping sauce.
