Ingredients

  • 160g Chilled Halal Australian Beef Striploin
  • 60g Cream cheese
  • 80g Creme fraiche
  • Zest of 1 lime
  • 5g Lime juice
  • 120g Mashed butternut squash
  • 70g Mashed potato
  • 20g Milk
  • 30g Cream
  • 6 pcs Jumbo asparagus
  • 40g Avocado
  • 5g Pomegranate
  • 15g Beef jus

Shortcrust Dough (Tart Crust)

  • 180g All purpose flour
  • 100g Butter
  • 3g Salt
  • 40g Water
  • 40g Milk

Method

  1. Prepare the tart crust using shortcrust dough.

  2. Line and dock the shortcrust dough.

  3. Bake in the oven at 180 for 20 minutes.

  4. Mix cream cheese, creme fraiche, lime zest and lime juice together.

  5. Cook mashed butternut squash, mashed potato, milk, cream and butter until smooth.

  6. Blanch the asparagus then saute with butter.

  7. Season Australian beef striploin and air fry at 180 C for 10 minutes.

  8. Assemble all the ready ingredients and cubed Australian beef striploin on the tart casing.
